Melinda’s Baked Oatmeal THM E

Serves 12

6 cups Old Fashioned (whole/rolled) oats
3 cups unsweetened almond milk
9 TBS xylitol (Or Sukrin Gold is amazing or 1/2 the amount gentle sweet)
1.5 TBS baking powder
1/2 tsp baking soda
9 TBS apple sauce
1 cup egg whites
1.5 tsp salt
1 TBS vanilla
1-2 TBS cinnamon


Soak oats and almond milk, in fridge overnight.
Preheat oven to 350
Spray 9×13 pan.
Add all other ingredients to soaked oats and stir. For baked oatmeal texture pour into pan.
If you’d like a more cake like texture, blend in blender or with immersion blender before pouring into prepared pan.
Bake for 20-30 min, until centre is firm.

Serving ideas:
Top with Greek yogurt and your favourite fruit, fruit syrup or sugar free syrup.
1/3 recipe and bake in 8×8 pan for 4 servings.
